Greetings, dear vegan family! After two months away, I'm back. August 2025 is almost over, and even though we're in the rainy season, or winter, the heat is exaggerated, so it's nice to make recipes that are simple and don't require much cooking. And I'm sharing one of these recipes with you today. It's QUINOA WITH VEGETABLES. I know many of you are familiar with quinoa, but just in case, I'll give a brief description of this pseudocereal, which is closely related to chard and spinach. The scientific name for this plant is Chenopodium quinoa, and it originates from the Andes. In fact, it was highly valued and consumed by the native civilizations of this area, and this custom is still maintained today. Although my country also has an Andean region, its consumption is not very popular in Venezuela, although it has gained popularity in recent years because it is considered a superfood, which is especially valuable for vegan diets.

Sé que muchos de ustedes conocen la quinoa o quinua, pero por si acaso, haré una breve descripción de este pseudocereal, que está muy emparentado con la acelga y la espinaca. El nombre científico de esta planta es Chenopodium quinoa, originario de los Andes, de hecho, en las civilizaciones nativas de esta zona, era muy apreciado y consumido, y aún hoy se mantiene esta costumbre. Aun cuando mi país también tiene zona Andina, su consumo no es muy popular en Venezuela, aunque en los últimos años se ha popularizado, porque se considera un súper alimento, lo cual es especialmente valioso para las dietas veganas.

Quinoa comes in several varieties: white, red, and black, all very similar in flavor and texture. Today I'm cooking white quinoa, which was the only one I was able to find in my town. I bought a pound of white quinoa for $7, and although it may seem a bit pricey, it's very filling. Now, among the advantages that quinoa has for being considered a superfood is that it provides all nine essential amino acids, which cannot be synthesized by our bodies. Let's remember that amino acids are like the building blocks of proteins. It also provides phosphorus, iron, zinc, and B vitamins. It's also gluten-free and helps control the glycemic index, making it ideal for diabetics. It's also very versatile because it can be prepared in many ways. That said, let's get to my recipe.

> La quinoa tiene diversas variedades: Blanca, roja, negra, siendo muy similares en sabor y textura entre sí. Yo hoy cocinaré quinoa blanca, que fue la que pude conseguir en mi pueblo. Una libra de quinoa blanca la adquirí por 7 USD, y aunque puede parecer un poco costosa, es muy rendidora. Ahora bien, dentro de las ventajas que tiene la quinoa para ser considerada un súper alimento, está que aporta los 9 aminoácidos esenciales, que no pueden ser sintetizados por nuestro organismo. Recordemos que los aminoácidos son como ladrillos que construyen las proteínas. Además, aporta fósforo, hierro y zinc, y vitaminas del complejo B. Adicionalmente está libre de gluten, y coadyuva al control del índice glucémico, por lo que es ideal para personas diabéticas. Asimismo, es muy versátil, porque se puede preparar en muchas formas. Dicho esto, vamos a mi receta.

+ Preparation time: This recipe is simple and will be ready in approximately 30 minutes. + Servings: 4 servings of quinoa with vegetables, approximately 100 grams each. The ingredient quantities listed below can be varied according to availability and individual tastes. + 60 grams of quinoa. Today I cooked the white variety, but red or black also work. + Half a red onion (approximately 30 grams). You can use white or yellow. + 1 small tomato (approximately 20 grams). + Half a cucumber (approximately 50 grams). + 20 grams of spinach. + Half a carrot (approximately 60 grams). + 30 ml of vegetable oil (I used olive oil). + Spices to taste. I used garlic powder and Spanish paprika, approximately half a teaspoon of each. + Salt to taste (I used half a teaspoon). + 1/2 teaspoon baking soda (to disinfect the spinach). + Enough clean water to wash, soak, and rinse the quinoa and vegetables. + 300 ml of clean water to cook the quinoa. + Pot, bowl, knife, potato peeler, colander, chopping board, teaspoon, plate, ladle, strainer, etc.

+ Tiempo de preparación: Esta receta es sencilla, y en aproximadamente 30 minutos estará lista. + Raciones: 4 raciones de quinoa con vegetales, de aproximadamente 100 gramos cada una. Las cantidades de ingredientes que a continuación presento, pueden variarse, de acuerdo a la disponibilidad y gusto de cada quien. + 60 gramos de quinoa. Hoy cociné la variedad blanca, pero también sirve la roja o la negra. + Media cebollas morada (aproximadamente 30 gramos). Puedes usar blanca o amarilla. + 1 tomate pequeño (aproximadamente 20 gramos). + Medio pepino (aproximadamente 50 gramos). + 20 gramos de espinacas. + Media zanahoria (aproximadamente 60 gramos). + 30 ml de aceite vegetal (yo usé aceite de oliva). + Especias al gusto. Yo utilicé ajo en polvo y pimentón español, aproximadamente media cucharadita de cada uno. + Sal al gusto (yo utilicé media cucharadita). + ½ cucharadita de bicarbonato de sodio (para desinfectar la espinaca). + Agua limpia suficiente, para lavar, remojar, enjuagar la quinoa y los vegetales. + 300 ml de agua limpia, para cocinar la quinoa. + Olla, bol, cuchillo, pelapapas, colador, tabla de picar, cucharilla, plato, cucharón, colador, etc.

The first thing to do is WASH the quinoa VERY WELL. To do this, add clean water, stir, and strain until the rinse water runs clear. This is very important because quinoa is coated with saponins, which give recipes a bitter taste if not washed properly. This time, I washed it seven times.

> Lo primero que hay que hacer es LAVAR MUY BIEN la quinoa. Para ello se agrega agua limpia, se remueve y cuela que el agua de enjuague salga transparente. Esto es muy importante, porque la quinoa está recubierta de saponinas, lo que da un sabor amargo a las recetas si no se lava bien. En esta ocasión yo la lavé 7 veces.

Once the quinoa has been cleaned and drained, cook it in clean water over medium-low heat for 20 minutes. I used 3 measures of quinoa, so I'll cook it in 6 measures of water, meaning double the amount of water. Stir occasionally until the time is up. Then turn off the heat and let it sit for 5 to 10 minutes.

> Ya limpia y colada la quinoa, cocinarla en agua limpia, a fuego medio bajo por 20 minutos. Yo utilicé 3 medidas de quinoa, por lo que la cocinaré en 6 medidas de agua, es decir, se usa el doble de agua. Remover eventualmente hasta que transcurra el tiempo. Luego apagar el fuego y dejarla reposar de 5 a 10 minutos.

While the quinoa is cooking, disinfect the spinach. To do this, add baking soda to the water and soak the chopped spinach for 20 to 30 minutes. After this time, rinse well and strain. Set aside.

> Mientras se cocina la quinoa, desinfectar la espinaca. Para ello añadir bicarbonato de sodio al agua y remojar la espinaca ya picada, por 20 a 30 minutos. Una vez transcurrido este tiempo, enjuagar bien y colar. Reservar.

Peel, chop, and/or grate the other vegetables, which in this case are tomato, cucumber, and carrot, but you can make any combination you like. Remember, quinoa is super versatile.

After 20 minutes of cooking the quinoa, you can see that it has multiplied its volume several times over, which is why it's so filling. You can also see how loose it is. Here, I transferred it to a plate to cool, and used the same pot to sauté the spinach and finely chopped onion over high heat for 5 minutes. I also added the spices and salt. While it's sautéing, stir to prevent the mixture from burning.

> Transcurrido los 20 minutos de la cocción de la quinoa, se puede ver que al cocinarse multiplicó su volumen varias veces, por eso es tan rendidora. También podemos observar lo suelta que quedó. Aquí la transferí a un plato para que se fuera enfriando, y aproveché la misma olla para saltear a fuego alto por 5 minutos, la espinaca junto con la cebolla picada finamente. Aquí también añadí las especias y la sal. Mientras se sofríe, se debe remover para evitar que se queme la preparación.

Once the spinach and onion are sautéed, combine them with the quinoa and then the vegetables. Stir until well combined.

And now the quinoa with vegetables is ready. All that's left to do is serve and enjoy this salad, which can be eaten warm or cold. It can also be eaten alone or served as a side dish. In my case, I ate it alone and loved its flavor, plus it's very filling and nutritious.
