Rollo navideño de arvejas: una versión veganizada del Asado Negro venezolano

In my family there are few Christmas meals, traditionally we eat dishes that are not vegan at all: hallacas, ham bread, chicken salad, and "asado negro". The most deeply rooted is the "asado negro" because it is a recipe that my dad has prepared for years and comes from his grandmother. For me, this was the best option to "veganize" as I know its flavors quite well, plus it is a challenge to make it feel and look like the original even without its main ingredient. Instead of the "Eye of round" cut, I will be using something I will call "round tofu" which I will explain soon how to make it. This ["Plant Based challenge: Vegan Christmas"](https://peakd.com/hive-180569/@plantpoweronhive/the-brand-new-plant-based-6e7ec64af7d12) really gets us to get creative, especially if your culture is like mine where meat is even saved for the holidays. **Round tofu** The main ingredient is also the first part of the recipe. We have to soak the green peans overnight, it could be also red lentils to get better color, I had green peas and I thought they also look festive. The next day we blend, each batch we add water, and two fingers over the level of the peas. Blend and strain. We will cook the water, beat it, stirring the bottom to remove everything that precipitates, something similar in appearance to cornstarch remains at the bottom, and we make sure that it also goes to the pot. Add salt, 1 tbsp. We will bring it to a boil and then we will cook over medium heat for 20 minutes, stirring constantly, towards the end we will do it with more force so that it does not stick to the bottom. Solidifies fast.

**Tofu redondo** El ingrediente principal es también la primera parte de la receta. Tenemos que remojar las arvejas verdes toda la noche, también pueden ser lentejas rojas para que tomen mejor color, yo tenía arvejas verdes y pensé que también se ven festivas. Al día siguiente licuamos, en cada tanda añadimos agua, dos dedos sobre el nivel de los guisantes. Licuar y colar. Coceremos el agua, bátela removiendo el fondo para sacar todo lo que se precipita, en el fondo queda algo con apariencia similar a la maicena, nos aseguramos de que también vaya a la olla. Añadir sal, 1 cda. Llevaremos a hervor y luego cocinaremos a fuego medio por 20 minutos, removiendo constantemente, hacia el final lo haremos con más fuerza para que no se pegue al fondo. Solidifica rápido.

Before starting to cook the tofu, make sure you have all the filling ready to go, the olives, raisins, cappers, bell pepper, and onions cut into small cubes. Also, brush with oil the glass that will work as a mold, just to prevent it from sticking, however, given the texture of the tofu it will probably come off easily.

Antes de comenzar a cocinar el tofu, asegúrate de tener listo todo el relleno, las aceitunas, las pasas, las alcaparras, el pimentón y la cebolla cortados en cubos pequeños. Además, pincela con aceite el vaso que funcionará como molde, sólo para evitar que se pegue, dada la textura del tofu probablemente se despegará fácilmente.

This next part needs to happen fast, when it cools it won't stick like a whole block but form a bunch of chunks. Put some of the cooked mixture in the bottom of the mold, add some filling, the more mixture, and keep doing it until you reach the top. Use a skewer stick to poke the air bubbles, do it like you are stabbing it repeatedly. Cover it with plastic or a lid and put it into the fridge until it is completely cold. Once done it will come out easily, just put the mold upside down and squeeze it a little bit. As soon the air gets through the sides it will come off. In a pan put enough oil to cover the bottom and fry the tofu, just put it in, let it cook for two minutes, move a little bit, two minutes more, and keep going until it is all golden. Including the top and the bottom of the tofu, do it carefully, you can use some kitchen clamps to hold it. Reserve.

Esta siguiente parte tiene que ser rápida, ya que cuando se enfríe no se pegará como un bloque entero sino que formará un montón de trozos. Pon un poco de la mezcla cocida en el fondo del molde, añade un poco de relleno, más mezcla, y sigue haciéndolo hasta que llegues arriba. Utiliza un palillo de altura para pinchar las burbujas de aire, hazlo como si lo estuvieras apuñalando repetidamente. Cúbrelo con un plástico o una tapa y mételo en la nevera hasta que esté completamente frío. Una vez hecho saldrá fácilmente, sólo tienes que poner el molde boca abajo y apretarlo un poco. En cuanto entre el aire por los lados se despegará. En una sartén pon aceite suficiente para cubrir el fondo y fríe el tofu, sólo tienes que meterlo, dejarlo cocer dos minutos, mover un poco, dos minutos más, y así hasta que esté todo dorado. Incluyendo la parte superior e inferior del tofu, hazlo con cuidado, puedes utilizar unas pinzas de cocina para sujetarlo. Reservar.

I made it the day before eating it, the same as the sauce. I didn't put them together because I didn't know how soaking it will affect the tofu, but it looks like it will be just fine, so you can make all of this recipe at once, but still eat it the next day so the flavors have time to set.

Yo lo hice el día antes de comerlo, igual que la salsa. No los puse juntos porque no sabía cómo afectaría el remojo al tofu, pero parece que estará bien, así que puedes hacer toda esta receta de una vez, pero aun así comerla al día siguiente para que los sabores tengan tiempo de asentarse.

For the sauce, cut all the ingredients into cubes or slices, not too big, not too small. First fry the onions in a pot, on medium heat for about five minutes so they have time to caramelize. Don´t move them. Then add the rest of the ingredients minus the tomatoes, soy sauce, mustard, and the raisins or olives you want whole. Once they are all bright and released their flavors, put everything into the blender

Para la salsa, corta todos los ingredientes en dados o rodajas, ni muy grandes ni muy pequeñas. Primero sofríe las cebollas en una olla, a fuego medio durante unos cinco minutos para que tengan tiempo de caramelizarse. No las muevas. Luego añade el resto de los ingredientes menos los tomates, la salsa de soja, la mostaza y las pasas o aceitunas que quieras enteras. Una vez que estén todos brillantes y hayan soltado sus sabores, ponlo todo en la batidora

Usually, we use more tomatoes and no corn starch, this time I'm adding one cup of water and the corn starch simply because I don't have enough tomatoes available and I want to have enough sauce. If you want to use just tomatoes you need about seven and to thicken it just needs time to let it reduce. Adjust the flavors. I ended up adding some panela because the tomatoes were acidic, and I like better the panela flavor than plain sugar. Once it thickens, it's ready.

Normalmente, usamos más tomates y no almidón de maíz, esta vez estoy añadiendo una taza de agua y el almidón de maíz simplemente porque no tengo suficientes tomates disponibles y quiero tener suficiente salsa. Si quieres usar sólo tomates necesitas unos siete y para espesar sólo necesitas tiempo para dejarla reducir. Ajusta los sabores. Yo acabé añadiendo un poco de panela porque los tomates estaban ácidos y me gusta más el sabor de la panela que el del azúcar sola. Cuando espese, ya está listo.

I left it for the next day to enhance the flavor, so this is day 3 of preparation actually. Cut the already sealed tofu into slices, 1.5 cm thick. Then fry them on both sides, at least two minutes on each side to get the golden color. Once they are ready, heat up the sauce again, put them into the sauce, cover completely and let cook for two minutes and then just let them sit there until it's time to serve. Don't lose any ingredient that burns while frying, throw them into the sauce, it gives it a nice smoked flavor.

Yo lo dejé para el día siguiente para potenciar el sabor, así que éste es el tercer día de preparación en realidad. Se corta el tofu ya sellado en rodajas de 1,5 cm de grosor. A continuación se fríen por ambos lados, al menos dos minutos por cada lado para que adquieran el color dorado. Una vez que estén listos, calentar la salsa de nuevo, ponerlos en la salsa, cubrir completamente y dejar cocer durante dos minutos y luego simplemente dejar que se asientan allí hasta que sea el momento de servir. The reason I decided to seal the whole piece before cutting, is because it makes it easier to get the borders of the slices golden, it also creates a ring similar to the one you can find in the original "asado negro". And I think it gives structure too, so the pieces don't break while cutting.

La razón por la que decidí sellar toda la pieza antes de cortarla, es porque facilita el dorado de los bordes de las rodajas, también crea un anillo similar al que se puede encontrar en el asado negro original. Y creo que también le da estructura, para que las piezas no se rompan al cortarlas.

We have a tradition that goes with the "Asado negro" and it is eating it with pasta the next day after Christmas dinner or new year's dinner. Also, it is usually eaten with a salad, so I combined those things to serve it with a pasta salad. It has pasta, long beans, and sweet corn sauté; it also has grated cabbage and carrot, some chopped onion, and a dressing of veganaise, mustard, and salt.

Tenemos una tradición que va con el "Asado negro" y es comerlo con pasta al día siguiente después de la cena de Navidad o la cena de Año Nuevo. Además, normalmente se come con ensalada, así que combiné esas cosas para servirlo con una ensalada de pasta. Lleva pasta, vainitas y maíz dulce salteados; también lleva repollo y zanahoria rallados, un poco de cebolla picada y un adereso de veganesa, mostaza y sal.

Look at this! You can see it served alone or with some pasta. I used red and green bell peppers for decoration, those beautiful Christmas colors. The best part of this recipe is that it got the approval of my father for the flavor. Of course, it doesn't taste exactly like the original recipe but really close. It takes time because the process takes time but it's not tricky, it's easy to pull off. It really put me in a festive mood and I must say, this is the first time ever that I eat all of the olives, raisins, and capers on my plate.

¡Miren esto! Pueden verlo servido solo o con un poco de pasta. Usé pimentones rojos y verdes para decorar, esos hermosos colores navideños. Lo mejor de esta receta es que obtuvo la aprobación de mi padre por el sabor. Por supuesto, no sabe exactamente igual que la receta original, pero se le parece mucho. Lleva su tiempo porque el proceso lleva su tiempo pero no es complicado, es fácil de hacer. Realmente me puso de humor festivo y debo decir que es la primera vez que me como todas las aceitunas, pasas y alcaparras del plato.

I hope that you like this dish. It was funny to make it, discover the possibilities, wonder if what I imagined would actually work. It took three days to make from soaking the green peas to serving it. And about 20 minutes to disappear haha. Well, I had a slice with arepa for dinner too. Delicious! Merry Christmas, everyone!!!
