--- I chopped the leeks, I had 1 kilo of leeks here, as you can see in the first photo. I cut the ones I thought were thick in half and chopped them finely. In the same way, I chopped the onion and grated the carrot. Unfortunately, I couldn't pick up the phone because my hands were very dirty during this process, but I chopped them in a classic way. Afterwards, I shredded about 200 grams of cottage cheese in my hand. I like to cook the ingredients after preparing them. When the preparation is over, I first heated 2 tablespoons of oil in a pan and roasted the onion until it turned pink. Then I added the leek and roasted it by stirring for about 2 minutes. When it lost some of its crispness, I added the grated carrot. I roasted it for about 10 minutes, stirring frequently. Immediately afterwards, I added black pepper and a teaspoon of chilli flakes. This process passed in the blink of an eye because I was talking to Nabi at the same time. I turned off the heat and waited for it to cool down a bit. After it became lukewarm, I added the cheese and mixed it well. Then, while waiting for it to cool completely, I mixed the white of one egg, 1 teacup (3/4 cup) of vegetable oil and 1 glass (1 cup) of milk in a separate bowl. Since I am already talking to Nabi, it is quite fun to watch his game play at the same time. Of course, this is great when I am not in a hurry. You can guess that this is not the case when I am in a hurry. Firstly, I spread the egg white, milk and oil mixture on the phyllo, then I spread the mixture thinly in the middle of the phyllo and folded the phyllo in half. Then I rolled it into a roll. Starting from the centre, I placed the rolled filled phyllo on the tray in a spiral shape as in the photo. Sometimes it was difficult to spread the liquid mixture on the phyllo. After all, we are talking about liquid and a brush may not be enough. In this case, I folded and unfolded the dry part towards the part where I put a little more liquid. It was an easier method than using a brush. When all 5 phyllo sheets were finished, the situation was as in the last photo. I love this tray because it is the perfect size for 5 pieces. It holds the phyllo without compressing it too much and without leaving it too loose. Then I placed the tray in the fridge before baking. The coldness of the pastry makes it crisper while baking. The same goes for potatoes. I think this applies to everything 😂

Annem istemişti. Kendisi yemese de babama sürekli pırasa yemeği yapar kendisi. Halbuki bilmezki babam bu yemeği sevmez, sırf annem yaptığı için yer onu. Bu seferlik babamı bundan kurtarmak istedim. Pırasayı ailede kimse sevmediğinden biraz yaratıcı olmalıydım. Bu yüzden de tadının çok da belli olmayacağı bir şeyler yapmalıydım. Evdeki malzemelerime baktım. Biraz pırasam, havucum ve peynirim vardı. Dışarı çıktığımda da gittim evimin yakınlarında ve kadın işletmesi olan bir yufkacıdan 1 kilo yufka aldım. Tabii oradan başka şeyler de aldım da ona sonra geleceğiz.

--- Pırasaları, burada 1 kilo pırasa vardı, ilk fotoğrafta gördüğünüz şekilde doğradım. Kalın olduğunu düşündüklerimi ortadan ikiye bölerek ince bir şekilde doğradım. Aynı şekilde soğanı da doğradım ve havucu rendeledim. Bu süreçte elim çok kirlendiği için ne yazık ki telefonu elime alamadım fakat klasik bir şekilde yemeklik doğradım. Sonrasında evde olan yaklaşık 200 gramlık köy peynirini elimde parçaladım. Malzemeleri hazırladıktan sonra pişirmeyi severim. İlk önce hazırlık biter, sonrasında pişirilir diye düşünüyorum. Hazırlık bittiğinde ilk önce 2 yemek kaşığı sıvı yağı bir tavada ısıtıp içerisine soğanı atıp pembeleşene kadar kavurdum. Sonra içerisine pırasayı da ekleyip 2 dakika kadar karıştırarak kavurdum. Biraz diriliği gittiğinde içerisine havuç rendesini ekledim. Onuda yaklaşık 10 dakika kadar sık sık karıştırarak kavurdum. Hemen ardından da karabiber ve bir çay kaşığı acı pul biber ekledim. Bu süreç aynı anda Nabi ile konuştuğum için göz açıp kapayana kadar geçti. Altını kapatıp biraz soğumasını bekledim. Ilık hâle geldikten sonra içerisine peyniri de ekleyip iyice karıştırdım. En sonra tamamen soğumasını beklerken ayrı bir kapta bir yumurtanın beyazını, 1 çay bardağı (3/4 cup) sıvı yağı ve 1 su bardağı (1 cup) sütü karıştırdım. --- Mutfaktaki masam biraz küçük olduğu için yemek masasına yerleştim 😂 Yufkaları masanın üzerine açıp iç malzemelerini ve yerleştireceğim tepsiyi de getirdim. Zaten Nabi ile konuşmaya devam ettiğimden aynı zamanda onun oyun denemelerini de izlemek oldukça eğlenceli oluyor. Tabii bu durum acelem yokken harika. Acelem varken durum bu değil tahmin edebilirsinizki. Sırasıyla ilk önce yumurta beyazı, süt ve yağ karışımını yufkanın üzerine sürdükten sonra yufkanın tam orta kısmına ince uzun şekilde yaydım ve yufkayı ikiye katladım. Ardından da yuvarlayıp bir rulo hâline getirdim. Bu rulo hâlinde olan içi dolu olan yufkaları merkezden başlayarak fotoğraftaki gibi spiral şekilde tepsiye yerleştirdim. Bazen sıvı karışımı yufkaya yaymak zor olabiliyordu. Sonuçta sıvıdan bahsediyoruz ve fırça yeterli olmayabiliyor. Bu durumda sıvısını biraz fazla koyduğum kısma doğru kuru kalan kısmı katlayıp açıyordum. Fırça kullanmaktan daha kolay bir yöntemdi. 5 yufka da bittiğinde durum son fotoğraftaki gibiydi. Bu tepsiyi çok seviyorum çünkü 5 adet için harika bir büyüklükte. Çok sıkıştırmadan hem de çok gevşek bırakmadan yufkayı tutuyor. Ardından da tepsiyi fırınlamadan önce buzdolabına yerleştirdim. Böreğin soğuk olması pişerken daha çıtır olmasını sağlıyor. Aynı şey patetes için de geçerli. Sanırım bu her şey için geçerli 😂

Fırına atmadan önce beyazını ayırdığım yumurtanın sarısını biraz sütle karıştırıp böreğin üzerine sürdüm ve hemen ardından fırına attım. Piştikten sonra fotoğrafını çekmeyi unuttum. Hâliyle de bu fotoğraf yendikten sonrasına kaldı. Üstü harika bir şekilde kızardı bu 45 dakika içerisinde. Zaten bunu fotoğraftan da görebilirsiniz. Ayrıca oldukça çıtırdı. Ağzımın içerisinde yufka çıtırdıyordu. Pırasalı börek bu kadar. Sanırım pırasayı severek yiyen çok fazla insan yoktur fakat bence bu börekten sonra severek yersiniz. Ayrıca peynir eklediğim için hiçbir şekilde tuz eklemedim. Peynir piştiğinde yeterince tuzlu oluyor. Buna, eğer deneyecekseniz, dikkat etmek isteyebilirsiniz. Sonra görüşmek üzere.
