Ratatouille Vegetables with Pasta

Ratatouille is a french vegetable cuisine, It is cooked by in sautee with tomato sauce. this dish has a sweet and tangy taste. Best to go with pasta or rice. My son (Robbie), loves this vegetable.

INGREDIENT's:

  • capsicum (red/green)
  • tomato
  • eggplant
  • zuchinni
  • tomato sauce
  • garlic
  • onion
  • salt and pepper to taste
  • sugar (1/2 tspn)
  • pasta 500g

PREPARATIONS:

  1. Sautee garlic and onion until become soft
  2. Add the capsicums
  3. Add the chopped tomato
  4. Once the tomato is soft, Add the diced eggplant
  5. simmer until tender, Add in the tomato sauce
  6. Add the courgette, simmer until soft
  7. salt and pepper to taste
  8. Add a bit of sugar to balance the acidity of the tomato
  9. Add in the boiled Pasta
  10. Serve warm and Enjoy!
