Ratatouille is a french vegetable cuisine, It is cooked by in sautee with tomato sauce. this dish has a sweet and tangy taste. Best to go with pasta or rice. My son (Robbie), loves this vegetable.
INGREDIENT's:
- capsicum (red/green)
- tomato
- eggplant
- zuchinni
- tomato sauce
- garlic
- onion
- salt and pepper to taste
- sugar (1/2 tspn)
- pasta 500g
PREPARATIONS:
- Sautee garlic and onion until become soft
- Add the capsicums
- Add the chopped tomato
- Once the tomato is soft, Add the diced eggplant
- simmer until tender, Add in the tomato sauce
- Add the courgette, simmer until soft
- salt and pepper to taste
- Add a bit of sugar to balance the acidity of the tomato
- Add in the boiled Pasta
- Serve warm and Enjoy!
