A Simple Red Pepper Sofrito

In preparation for this week's @steemit-ironchef challenge, I have made a simple Red Pepper Sofrito that can be used as the basis for many dishes. Sofrito is a sauce used in Spanish, Italian, Portuguese and Latin American cuisine. It's like a cross between Pico-de-Gallo and Salsa. Sofrito can be made in many ways, for instance jalapenos and spices can be added to make it hot and spicy. In this particular case, I will be showing you how to make a simple, very basic Sofrito. Feel free to spice it up any way you'd like!

Ingredients

2 Red Bell Peppers
1 Green Bell Pepper
4 Red Onions
3 Small Tomatoes
5 Cloves of Garlic
6 Mini-Sweet Peppers
Salt & Pepper

Step 1: Chop Up the Veggies

Chop up all of the ingredients, small enough to fit into a blender or food processor.

Step 2: Blend

Add the chopped veggies to a blender or food processor. Sprinkle on some salt and pepper. Use the pulse setting to ensure you do not completely liquefy the ingredients.

Step 3: Enjoy!

It's as simple as that. Blended veggies! Now it's time to add this to whatever dish you choose. Try topping off some tacos, or a salad. The options are endless!
