Coconut Quinoa Breakfast with Fresh Strawberries and Hemp Hearts

Hello Steemit friends,

After being offline two weeks, I am back today with this easy to make delicious breakfast recipe! It's summer here already and I simply love it! Fresh fruits, greens, herbs and many summer legumes are available now!WOhoo...!

For this recipe, I chose Fresh Strawberries, while I still can. They are the first to be no longer found cause they're pretty over. At least for now. In couple of weeks we'll have them fresh again. 

This is a breakfeast recipe but feel free to have it as a dessert or maybe a snack? (only in small portion)

INGREDIENTS

  • aproximately 1 cup cooked quinoa ( just boil it in water) (about 1/2 cup uncooked)
  • coconut milk (about 3/4 cup) 
  • 1 small banana or 1/2 half of one medium banana
  • one handful of fresh strawberries
  • hemp hearts
  • cinnamon
  • sweetener (optional) I didnt need it though

Actually, I didnt measure the ingredients. I just made it up and you can do the same. It's one recipe you dont need to struggle with measurements.

INSTRUCTIONS

1. Boil the quinoa in water. I had them already cooked in the fridge (leftover from my salad the other day). You have this option too, and when you make this, you just warm it up. Then strain the quinoa and add it to one bowl.

2. Add coconut milk.

3. Add cinnamon

4. Add toppings: strawberries, banana and hemp seeds. 

No struggle right?? 

This is all you have to do! And to be honest, this is my favorite kind of breakfast recipe. Something in a bowl, easy and quick to make and colorful! Warming my heart and my mind! ❤️

This recipe is vegan, soy free, lactose free, gluten free, sugar free! So friendly for our digestive system, don't you agree?

Not to mention the whole benefits of quinoa, strawberries or hemp seeds!!
