Breakfast is the most important meal of the day. That's why we should make sure that it is healthy and tasty. One of my favorite vegan breakfasts is the scrambled... tofu! πŸ˜‹Β 

Scrambled tofu with kale, tomatoes and mushrooms.

Ingredients:

  • 1 block of tofu 200 g (bio no GMO)Β 
  • 1 small onion
  • a clove of garlic
  • a few kale leaves
  • 1 tomato
  • a few mushrooms
  • a few dried tomatoes in oil
  • a pinch of turmeric
  • Himalayan salt or Kala namak salt
  • pepperΒ 

Preparation:Β 

Finely chop the onion and garlic and braise on oil from tomatoes. Chop the kale leaves, tomato, mushrooms and dried tomatoes. Rinse the tofu and crumble it over a frying pan. Season with salt, pepper and turmeric and fry for a few minutes. Serve hot. Β
