It is a marvelous day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
For today's feast for our full time volunteers, we prepared a satisfying almost all raw multi course extravaganza!
We started with a beautiful green garden salad, then had raw zucchini noodles with raw yellow tomato sauce à la @qiqi-power, and finished with a cooked course of broccoli rabe, brussels sprouts, and our classic favorite mashed potatoes!!
Today's salad had lots of garden greens including arugula, lettuces, radish greens, and swiss chard. We topped it with chopped onions, bell peppers, red tomatoes, and shredded carrots.
It is great fun to raise, tend, and harvest plants, and so rewarding to eat the crops! Plus, bright, raw veggies have tons of compounds that enhance health in the human body! This salad is an antioxidant powerhouse that keeps the body in tip top condition, and it's delicious!
Then we had zucchini noodles with tomato sauce. Our own @qiqi-power had a blast preparing this dish!
Raw zucchini noodles are a wonderful stand in for traditional wheat pasta. They taste great, and the texture is actually quite similar if you use a spiralizer to slice the zucchini.
This dish is yummy and quite easy to make, but it tasted even better because QiQi poured her joyful, radiant love into it! :)
Here is beautiful @qiqi-power making the raw sauce with garden grown & hand harvested yellow cherry tomatoes, garlic, onions, and oregano. 😍
We used the raw sauce to top the raw zucchini noodles and sprinkled on a yummy topping of nutritional yeast, sprouted sunflower seeds, and parmesan cheese.
The topping was excellent on everything, including our cooked broccoli rabe with brussels sprouts, as well as the salad! :)
The green cooked veggies were especially delicious paired with creamy, thick, hot mashed potatoes!
When we make mashed potatoes, we make huge bowls of them! It takes a lot of potatoes to feed a dozen people as much as they want, plus it is just about the same amount of effort to make a small vs. a large quantity of them. You still have to boil the potatoes for the same amount of time, and we use a hand mixer to get them nice and smooth, so even that takes almost the same exertion. It might take a few more minutes to peel some extra potatoes for lots of people, but as you can see we used red new potatoes and left the skins on them.
It's great that mashed potatoes are a wonderful dish for a whole community, because they are also extremely delicious and one of our favorite dishes! We love these in all sorts of ways and sometimes make vegan versions, but for tonight's meal we used traditional cream and butter to make them rich and wonderful.
Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food!
We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
