Ingredients for your healthy lentil stew
Ingredients: (for 4 people)
Lentils: ..........................................................250 grams or 8.9 oz
Pumpkin: ......................................................250 g or 8.9 oz
Crushed tomato: ......................................... 350 g or 12.35 oz (1 can)
Carrot: ...........................................................1 medium.
Celery: ............................................................50 g or 1.75 oz.
Onions: ...........................................................1 ½ small
Green onion: .................................................. 75 g or 2.65 oz (chopped)
Red pepper: .................................................... 1 small
Garlic:................................................................2 teeth
Ground meat: ..................................................900 g or 31.75 oz (cow)
Pure chorizo..................................................... 400 grams or 14.11 oz (pork)
Extra Virgin Olive Oil: ......................................required quantity
Water: .............................................................. required quantity
Himalayan sea salt: ........................................ required quantity
Aromatics:
Paprika: .............................................................1 small spoonful
Oregano: ...........................................................1 medium spoonful
Cumin: ...............................................................1 small spoonful
Parsley: ..............................................................1 teaspoon small
Laurel: ................................................................1 sheet
How to make lentil stew?
First we have to wash the lentils. In order to save gas during cooking, it is best to soak them the night before preparing the stew or at least 8 hours in advance. By adding water remove all foreign bodies that float.

Start boiling the lentils in a pot and cook for about 30 minutes. In another pot we put extra virgin olive oil and the onion cut in small squares, we cook the onion and we add the pumpkin cut in cubes, the carrots cut in thin slices and then the ground meat and the chorizo cut in medium slices, we cook about 15 minutes and then we add the tomato.

Then add the diced celery, the bell pepper cut into strips, the chopped green onion and finally the chopped garlic. When the lentils are almost cooked, remove them from the heat and pass them through a sieve.
Fourth
Add water to the sauce along with the lentils and condiments including bay leaf. Cook 20 minutes more until the lentils are soft and can be eaten. So the stew is incorporated and takes flavor. Then we finally add sea salt or Himalayan salt to taste. Remember to moderate the salt.
