Oh, Good Golly Gosh! Sandwich Memories!
Wow, this really opens so many pathways, not only from a blogging perspective but neurologically too. It’s kind of hard to pinpoint and stop the drool from running out the side of my mouth, “Slurp.”
I’m going to have to award this special occasion to my mother. She’s a cook extraordinaire, who used to pack me the most amazing sandwiches, back when I was at school. Now I’m going back, waaayyy back, haha.
My friends attempted to lure me to the dark side, offering their tuck shop buys in exchange for those delectable sandwiches. Me, knowing I had my hands clasped over absolute gold, didn’t budge. Why would I want your ham & cheese pie when I’ve got these beauties? I guess that’s where my love for homemade versus store-bought started. Occasionally, I’ll opt for a Take-Away, however, 99% of the time, I can do it better at home.
Shredded Pork, Mayo & Fresh Tomato
What were those sandwiches, you ask?
My absolute favorites were Mondays. Fresh slices of white bread stuffed with left-over roast which was either lamb or pork. These were simple but delectable. Thin slices of juicy lamb or pork, with fresh tomato and creamy mayonnaise, was all that was needed. The correct Mayo is critical in balancing that flavor profile. Don’t ask me which Mayo it was, some secrets are best left untold… or I actually don’t remember, haha. Oh how I wish I had photo's of those!
During the rest of the week, it would alternate. Thinly shaved ham, lettuce and tomato. Chicken Mayo with that same delectable mayonnaise. Lastly, the ever so humble salami and cheese. Damn! I ate a lot of meat, huh? That’s just the way it was. My stepfather back then was a typical farmer kind of guy, who insisted on meat, meat and more meat. Heck, I wasn’t complaining. I loved meat and still do.
Fast-forwarding to the present, I’d have to say the best sandwiches remain leftover roast with tomato and creamy Mayo. Hints of rosemary and garlic in between those delectable bites of yumminess is pure heaven! Nowadays, they’re not as common as I’d like, however, when we do have a roast with some leftovers, they’re most certainly going to end up on a sandwich.
