Vegan Gingerbread Waffles

In the Morning, I'm making Waffles

It is far from Christmas time, but I still get a craving now and then for the flavor of gingerbread. A couple of years ago I came across this recipe for a vegan gingerbread waffle and it is my go to.

Whisk together the dry ingredients. Don't have pumpkin spice handy in May? Here is a quick recipe I use. 1 Tablespoon ground ginger, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon clove
Whisk together the wet ingredients. I use oat milk as my non-dairy milk, I find it has the most subtle flavor and a texture that closely resembles actual dairy.
Add the wet ingredients to the dry and stir to combine, but do not over mix. Overmixing will develop the gluten and make it more difficult for the baking powder to give the waffle its rise.
I have two different sized waffle irons. I like the small Eggo like waffle maker, but it takes forever to make the waffles one at a time so I use both the smaller and larger to make the cooking process go faster.
These take about four minutes in my smaller waffle iron, but closer to 2 minutes in the larger. You will have to experiment for your particular set up. The smaller iron works perfect with 1/4 cup of batter, the larger uses 1/2 a cup.

Final Notes


This recipe makes a bit of a cakier waffle than I am used to. For a crispier waffle let them sit for a few minutes before serving. These also store well in the freezer. When you have a waffle craving pop one in a toaster for a couple minutes to reheat and it will result in a more familiar crispy outside and fluffy interior. That is if there are any left for later šŸ˜€

I enjoy these plain with a bit of vegan butter spread, but for a decedent and rich treat top it with a cream cheese frosting!
