Lunch is one of the meals that the vast majority of us consider indispensable, there we make use of different ingredients and combinations to make it abundant and nutritious.
Today I share chicken with vegetables, this is my way of doing it and of course with what is in the fridge.
For this recipe I used
Several pieces of chicken
Eggplant
Carrot
Cauliflower
Zucchini
Chili
Garlic
Onion
Parsley
Cèlery
Capers
Olive oil
Chicken broth
Seasonings such as: salt, cayenne pepper, rosemary (I really like the taste and smell it gives off when placed on the chicken).





I cut the eggplant in circles and put it to soak for a while with a little salt.
