DIY PREPARATION OF HOW I MADE MY EGUNSI SOUP (MELON SEED) WITH UGU (PUMPKIN VEGETABLE)

Today on my food blog, I will love to share a step by step process of how I prepare Egunsi soup (Melon seed) with ugu (Pumpkin vegetable) 😋

To start with, I will rinse my already peeled melon seed (egunsi) with pepper and onion then I will blend.

Place a clean pot on fire, adding your palm oil (Red oil)

Let it heat up for about 10 seconds then you add the blended melon paste into it.

Then you add your seasoning to taste (Bullion cubes and salt).

Let it fry for awhile till the melon is fully cooked before adding the pumpkin vegetable into it.

Because it will only be staying on fire for about a minute after adding the vegetable to still maintain the crunchiness.

Once you are sure the paste is fully fried to suit you then you add the pumpkin leave, mix well then you cover for a minute to steam in then you serve and enjoy 😋
