On this occasion, I bring you a recipe that will delight your palate, it is about some sighs, those light as air sweets, made with the Swiss meringue technique and with a magical touch of rain of colors that if you eat one you eat them all.

- To begin, separate the egg whites from the yolks in a container.
- Add the sugar to our egg whites and place in a bain-marie. This step is important to get the perfect consistency in our sighs. We beat non-stop, testing with our fingers making sure that each grain of sugar is completely dissolved.
- After removing the mixture from the water bath, we transfer it to the counter, with an electric mixer, beat vigorously for about 5 minutes, and achieve the desired consistency that the mixture forms peaks and a smooth and firm airy texture.
- After the minutes of vigorous beating have elapsed, it is time to add the cream of tartar together with the cornstarch. These two ingredients will add texture and stability to the sighs mixture.
- Then add the cream essence and the lemon drop. Stir
Now, after preparing the mixture, transfer it to a piping bag. A useful trick is to place the piping bag inside a glass and pour the mixture into it. Then, we add the portions on the tray that we have previously prepared with Bond paper.
- After adding the rain of colors we take to the oven for 130ยฐ Celsius, for approximately 70 minutes here they were in that time, it always takes longer to bake depending on the oven, more or less an hour and a half.
