Good day hivers and happy Sunday!
It's 7 in the morning in our country and just finish preparing for our breakfast.As a housewife and a mom as well ,thinking what to prepare in every meal is one of the thing that makes me stress especially if were running out of budget.
Every meal I need to prepare good for 10 persons including my in-laws since we are living with them.It's not easy anyway especially this time that I need to keep and save more money for our house construction.I need to budget tightly my husband salary.
So this morning ,I prepare a Filipino recipe ,the tortang talong(Eggplant with egg)
** Ingredients needed**
-Eggplant
-Egg
-onion
-tomato
-salt and seasoning to taste
-cooking oil
Procedure
In a pot ,bring water to boil.Since I am only using 4 eggplant I boiled two cups of water.
When it boiled ,add the eggplant .Make sure to flip it to make the other side cooked.
While waiting for the eggplant to cooked ,I am preparing the spices like onion and tomato.
Beaten the eggs and add the slice spices and add salt and seasoning to taste.
Check the eggplant if it's already cooked and remove it from water.Try to wash it with cold water for you to easy to peel it off.
Smash it a little bit make the egg absorb it taste and also to make sure that there's no worm on it hahaha.
And mix it with the egg mixture and spices.
Then start frying .
When it turn brown ,just flip to the other side.
And here's my tortang talong(eggplant recipe) for breakfast.
Anyway ,just a little tip on how to check the egg plant and make sure there's no worm on it.
Choose and egg with no little holes and when you touch it ,there's no hard portion on it .
