My favorite Dish And Why I Love It

What would we have done without food? Shrivel, shrink and fade away,maybe. Well, there might have been way to survive but we already know food, and it is the fuel of our lives until the very end.

Food is essential for survival as it provides nutrients needed for the full function of the body. Example of such nutrients are;
Carbohydrate, vitamins, proteins, fats, minerals and water.

Waakye, jollof rice, ampesi, fufu, akple, tuo zaafi, apeprensa, adibi, tubani, konkonte, kenkey, banku among others are all Ghanaian dishes I like to eat but my favorite is banku served with okro stew.

What is Banku?- it is a dish prepared with corn dough and cassava dough, mixed with water into a paste and allowed to cook on fire till it turns whitish brown and ready to eat. Not forgetting the addition of salt to taste.

Ingredients for okro stew; chopped okro, diced garden eggs, red oil, pepper, onions, 1 clove of garlic, an inch piece of ginger, salt to taste,tuna, crabs, beef, wele(cowskin), salted fish (momone), seasoning powder for beef.

Preparation- cook the chopped okro separately to maintain its slimy nature. Boil the diced garden eggs for few minutes. Put the meat and wele in a saucepan adding a pinch of salt and seasoning powder. Blend the onions, garlic and ginger as well and add the mixture to the meat to steam.

Put a saucepan containing the palm oil on fire and allow to heat, first add the salted fish(momone) to give it a nice aroma and later add chopped onions. Add blended pepper to cook for a while before adding the stock from the steamed beef. The next will be the tuna broken into chunk pieces, followed by the cooked beef and wele, cooked crabs, cooked garden eggs and finally the cooked okro. Salt to taste is added at the final stage so as not to make the stew salty because the salted fish and the seasoning contains salt.

Why I love banku with okro stew.
It is a balanced diet containing all the essential nutrients needed for growth, energy-provision, fighting diseases and a lot more for the body. Okro also contains fibres good for digestion. It is low in calories but contains loads of nutrients. The vitamin C in okra helps support healthy immune function.

Reason number two, banku with okro stew is a dish I can eat all week long without losing appetite.

Finally, even when my stew is finished, I can still eat my banku with hot pepper and sardines.
