Ginger broth is a warming gravy that also has a unique flavor. Pair it with your favorite vegetables for a nice meal or even to serve when you're not feeling well.
The weather is very unpredictable at the moment in the area where I live. During the day, it really feels hot and stings the skin. At night, it suddenly rained and the air became very cold.
Like this time the air was cold even though the rain had finished. I thought of something warm for dinner. Meanwhile, in my refrigerator there are only a few vegetables available. I had a big chayote, carrot, and mushrooms. I have to make a simple menu that uses these ingredients.
We have to get used to combining foods to be able to create new menus with limited ingredients. It is very useful in families, to save family members from starvation.
So, this time I will share about clear soup from chayote, carrot, and mushroom ingredients, using ginger broth as a delicious and simple gravy flavor. You can also replace chayote with other veggies which are suitable as a filling for clear soup.
Apart from that, this type of clear soup is very easy to make. It's even suitable as a dinner menu for those who are tired after coming home from work.
THE INGREDIENTS
- a chayote, diced
- a carrot, diced
- 100 grams of mushrooms
- ginger, grated and use 1/2 tablespoon
- garlic, grated and use 1/2 tablespoon
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon brown sugar or sweet soy sauce
- cinnamon stalk or cinnamon powder
- water, about 800-1000 ml
- (optional) seaweed flakes to serve
COOKING INSTRUCTIONS

I used a cheese grater to get grated ginger and grated garlic. Then, I measured them with 1/2 tablespoon each to make it easier for you if you want to recook this recipe.
Heat a little cooking oil. Then, add grated ginger and garlic, also cinnamon. Stir-fry them until caramelized.
Add water, then bring them to boil. To speed up time, you can cover the cooking pot.
Once boiling, add chayote, carrots, and mushrooms. Also, add pepper, salt, and brown sugar. Cook for around 5-8 minutes depending on the texture of the vegetables. Meanwhile, I only used 5 minutes.
Serve chayote soup with ginger broth in warm condition. I served the soup as a complement to the main course on the dinner menu. To add savory flavor, I used seaweed flakes mixed with chili powder, as a topping for the clear soup.
In fact, ginger plays an important role in making gravy taste delicious and warm. Indeed, it is very suitable for serving on a cold evening. Apart from that, if you are cold, soup using this ginger broth can be comfort food and make you better. Wanna try this clear soup, veggie lovers?
