Onion Eggplants

Hello everyone,
Stuck weight now is stressing me out a bit, I'm already in a calorie deficit but instead of losing weight, I'm actually gaining a little because of unexpected things. Yes, I still eat a lot of carbohydrates, especially 'rice' which makes me tend not to lose weight. During running a calorie deficit for 6 months, I've lost 15 kg and now I want more. I dreamed of weighing 55 kg as my 'body goals' like I was 17 years old.

The effort didn't end there, I learn a lot to know about my own body. The doctor advise me to eat less carbohydrates because I have diabetes which will have an impact on the difficulty of losing weight, the insulin I use makes it easier for my body to process carbohydrates and that has a big effect on weight gain. So, actually I have to be grateful even though I didn't lose weight but fat loss happened.

So I thought about making my plan meal by reducing carbohydrates from rice or sugar, so I plan to make a plan meal by increasing vegetables and protein. Because usually I get protein from tofu and tempeh, so I made some vegetables that caught my attention and aroused my appetite.

It's quite simple actually, that there are many types of vegetables that I like, just like I like eggplants. Eggplant is one type of vegetable that tastes delicious when processed properly. I got imported eggplant which has a good taste and easy processing. Suddenly one day I got imported eggplant at a cheap price and it made me very happy. I got these 2 eggplants that weighed more than 500 grams for less than $ 1, that's why I said I was very happy. As far as I know, these eggplants are usually sold for $ 3, which is quite a fantastic discount.

Wait, eggplant is most delicious grilled or grilled, there is a 'smoked' taste which is enough to make the appetite shake to eat it. How does it feel if the eggplant that tastes plain will be very tasteful if added with spicy onions and chilies, doused with fresh lime juice. Ah, what a perfect meal in sunny weather!

The Recipe


Just a few ingredients, I use of 1 eggplant, 6 clove of onion, 1 tsp of chili powder, 3 types of red, orange and green chili, lime, water and salt. Ingredients that are easy to get right? Yes, for the chili, you don't need a lot of color, just 1 is actually enough, but this time I really want to make it taste so hot and spicy.

The eggplant that I have, I wash and clean with water, then cut into 2 parts and cut in the middle. Then I add 1 tsp of chili powder which I will rub all over the eggplant. Don't forget that I heated the non-stick wok pan, then I poured a little oil, not using oil is also fine.

I placed the eggplant on the wokpan and flipped it over when one side was done. This step makes the eggplant softer and perfectly cooked, it will be very tasty because it has been given chili powder beforehand. Step which will take 10 to 15 minutes. It works really well and fast compared to using the oven.

Once the eggplants were cooked, I thinly sliced the onion, chili and lime. Everything is done when you have cleaned it with running water and soaked it for 3 seconds in hot water. After everything has been thinly sliced, put it in a bowl and add 100 ml of hot water. then squeeze lime juice and add salt. Stir until the salt dissolves in the hot water.

Arrange the eggplant that has been toasted neatly on a plate, then flush with the chili and onion sauce. After that all the steps are completed and the eggplant onions are ready to be served to be eaten heartily on a sunny day!
