Eggplant is a type of vegetable that many people do not like. In fact, it is often the choice of vegetables that are rarely processed into attractive dishes at home. In fact, if it is prepared in a different way, which is certainly unique, it will make this dish liked by various groups. Well, this time I will make something different in mine. For some reason this recipe arrived when my mother brought home green eggplants. I enthusiastically looked at the contents of the fridge to see that there was corn left over from yesterday being boiled. Now from wilted corn I started to make something delicious to eat.
Crispy eggplant with crispy sauce is a simple dish that is very easy to make. The combination of flour fried eggplant with natural sweet spicy sauce from corn will surprise you when you get results with a quality taste. Here I will invite you to prepare some materials.
Fried eggplant with corn sauce
Here are the ingredients that I use in preparing simple snacks made from processed eggplant and corn.
4 tablespoons of wheat flour
1 tablespoon of cornstarch
¼ teaspoon ground pepper
Sauce Ingredients
1 piece of corn
1 lime juice
6 bird's eye chilies
1 red onion
2 cloves of garlic
For the use of eggplant, actually you can use any eggplant. I'm sure the texture of dense eggplant like green eggplant, in my opinion, will be better. This is because eggplants do not contain much water and even have a denser texture than other eggplants. So it will make the flour crispy longer.
Cooking Procedure
In the preparation of this dish, I did two stages in cooking, the first stage was preparing the eggplant first. Then I just prepared the corn gravy. Now one thing you need to know is very easy to make.
Prepare the eggplant, then cut the eggplant obliquely and with a thin thickness so that it is crispy when eaten.
Soak in salt water, so the eggplant doesn't turn black easily.
Make a dough for frying flour, by adding flour and cornstarch, then stir with salt.
Add ground pepper, stir until thickened, and add water.
Dip eggplant in thick flour.
Then fry in hot oil until golden brown.
Peel the corn kernels, from the cob then wash thoroughly, set aside first.
Blend the ground spices, shallots, garlic and cayenne pepper.
Saute ground spices, with a little cooking oil, then add a little water.
After the seasoning starts to boil, add the corn kernels and cook until it thickens.
Season with salt and mushroom broth then cook until dry and not runny.
Serving Suggestions
Serve the crispy eggplant by drizzling the corn sauce on top. Or you can also dip the eggplant with the sauce separately. Both of them never betray delicious and perfect results! The combination of crispy eggplant with corn sauce really surprised me. They are perfect, crunchy with a touch of corn sauce that has a spicy and sweet taste making it so perfect.
The first time I made corn sauce, it didn't disappoint at all. The result is in accordance with my expectations, when biting eggplant fried with flour coating. Crunchy and savory, especially the super delicious creamy sauce, naturally sweet and spicy from corn makes this dish very tasty. In fact, I can finish it in an instant and it's not left on the plate.
