Moist Apple Pie with Apple Cubes šŸŽ

When the autumn season arrives, there's no better way to enjoy the crisp, cool air than with a warm slice of apple pie. This classic dessert is a symbol of the fall season, and it's as simple to make as it is satisfying.

This recipe doesn't include any "crazy" ingredients and it is pretty much a very simple vegan cake except it includes apples and more spices.

I can't imagine autumn now without baking an apple pie 😁 It was always a tradition in my family and once the weather gets cooler and I see the first yellow leaves outside, my taste buds start asking for some apple pie šŸ˜… I can even taste it now while writing about it!

Surely you could make a tart instead of simple pie or caramelize the apples before putting them in the pie but when the air is cold I usually want something comforting and quick. Therefore, this recipe won't demand much effort!

You can serve this pie as it is or sprinkle some icing sugar on top. It would also go perfectly with some ice-cream!

You will need:
About 20cm. diameter and 7-8 cm. depth round baking tray is used
ā— 250 g. wheat flour
ā— 70 g. brown sugar
ā— 1 teaspoon of baking powder
ā— 1 teaspoon of baking soda
ā— ½ teaspoon salt
ā— 1,5 teaspoon cinnamon
ā— 1 teaspoon ground ginger
ā— ½ teaspoon nutmeg
ā— ½ teaspoon ground cloves
ā— 2 ripe bananas
ā— 60 ml. coconut oil
ā— 230 ml. unsweetened plant-based milk (soy is used in the recipe)
ā— 1 tablespoon apple cider vinegar
ā— 2 medium-sized apples (whole apples weighed 450 g. (making 330 g. of apple cubes))

Preparation

  1. Preheat the oven to 180 °C.
  2. Mix the milk with the vinegar and set aside - it will turn into buttermilk.
  3. Mix flour, sugar, spices (all dry ingredients).
  4. Peel the bananas and mash with a fork.
  5. Peel, core and dice the apples into cubes.
  6. Mix the mashed bananas with the milk and vinegar mixture.

    Then add it to the flour mixture, along with the melted coconut oil and mix well.

    Add the chopped apples and stir.
  7. Grease a baking tray with coconut or other oil. I did it with hands, putting the oil on the base and sides of the tin.

    Pour the cake mixture into it.

    8.Bake the cake for 45-55 minutes, depending on the depth of the tin. The cake can be checked with a wooden skewer and is baked when the skewer inserted comes out dry or almost dry, as the apples may have retained moisture.
  8. Once baked, leave the cake to cool and then slice or remove from the tin entirely.
