You will need:
about 230g. of caramelized onions are cooked. For this recipe it is also important to use a non-stick pan
ā— 6-7 large onions
ā— 1 tablespoon of olive oil
ā— Pinch of salt

For sandwiches:
I do not include the specific measurements here as you will totally decide the number of sandwiches that you want to make :)
ā— Sandwich bread
ā— Hummus
ā— Optional: cooked tofu, sun-dried tomatoes, fresh herbs or other toppings

Preparation

  1. I had pre-made hummus so I didn't include its' separate recipe here but if you are unsure how to make it here are some tips:
    I take 1 can of cooked chickpeas, drain and wash them. Then I put them in a container together with 2 cloves of garlic, ~1 tablespoon of olive oil and a sprinkle of salt. I blend all this with a hand blender until smooth (add some water/more oil if it doesn't blend). You can add a variety of other spices but this is a classical and very simple recipe.
  2. Peel the onions.

    Cut them in half and cut them into strips.
  3. Add 1 tablespoon of olive oil to the pan.

    Add chopped onions and start frying on medium heat - there is no need to preheat the pan. It is actually better to not preheat it so that the onions don't start to cook too fast and burn.
  4. Sprinkle about a pinch of salt on the onions and mix.
  5. Fry the onions covered with a lid and stirring every few minutes (3-5 minutes apart).

    After 20-30 minutes or when the onions start to become transparent - remove the lid and cook without it, also stirring every 3-5 minutes. If the onions start to burn, add a splash of water.
  6. After another 20-30 minutes, the onions should start to brown and caramelize - then stir frequently so they don't burn too much - every minute/30 seconds, and the more the onions brown, the more often you should stir as now they will become to caramelize quicker.
  7. The onions will be ready when they are all dark brown. The entire caramelization takes about an hour of cooking in total.
  8. For sandwiches: spread hummus on sandwich bread and top with caramelized onions. It is very suitable to put fried tofu, sun-dried tomatoes and decorate with fresh herbs.
