





Mondays are pasta night @ The Sandbag House. I was delighted to get a bag of beautiful little sweet peppers at the market. Local farmers allow locals to glean what is not suitable for the market. Often, the odd blemish or a little bit of sunburn is all that is "wrong" with the produce. It's a win-win for the farmer, for the seller and for us.
Last night I roasted them - with a green one - and peeled them. The pasta (homemade as usual) was tossed in a coriander and cashew pesto, as were the roasted peppers.
Topped with 15-month mature cheddar and served warm as opposed to piping hot. The antipasti was a salad with #homegrown beetroot, tomatoes and lettuce.
Perfect for a hot summer evening and a good start to the week.
