Today I wanted to share with you one of my favorite dishes to make. It is healthy and easy to make. This is my version of Thai curry.
My favorite way to cook is to throw a bunch of healthy ingredients into one pot and make a big batch of it!
For this dish the in ingredients are:
Carrots
Potatoes
Kale
Garlic
Red Pepper
Brocoli
Rice
Udon Noodles
Red Curry Paste
Tofu
Coconut Milk
