Hello there, full-time weekenders!


Weekends are usually the days when we decide whereas there'll be leftovers for lunch and dinner or something else will be prepared. It is usually the former. Mom doesn't share the kitchen that much. So I can't get creative with foods and make something. However, when she wants to make something delicious, she goes overboard.

Last weekend, since we had had our big bowls of soup, the next day she had the idea of making cannelloni. If you haven't had any of this, just picture a lasagna with cylindrical pasta instead of sheets. It is a troublesome dish to make as it requires plenty of steps for preparation, but it is delicious all the same. The best part is that as lasagna, there's usually leftovers. So it means there'll be more of the dish during the week.

Back when I lived far from home, weekends used to be the days of getting creative with foods. I used to make bread and learn new recipe to try the next week. If course, I lived with a group of other teachers and we had the tendency of giving advice and learning from each other to try some other recipes. That was the stage of my life when I discovered my love for cooking.

And it was also during that time that I had to prepared food for the rest of the week. I don't miss those days one bit. I like my food cooked on the moment. Some leftovers aren't as good as my mom's cannelloni. But sometimes there's no other way around.


And it couldn't have been other way. I mean I'm always hungry. Having cooking skills makes me a danger to my wallet.


I think it is cool having the chance of making food or just eating whatever you have in your fridge and it depends entirely on your mood. There are days when I get asked about things for lunch or I'm told we're having lunch outside. But that's just how it is. Around here lunch is the big meal of the day. I know in other countries it tends to be dinner. The food situation is not as relevant as having food.

If there's no food, then, there's a big problem. So it all just depends on what's the mood like and how much time you have. Now that I think about it, maybe one day I'll get the wooden spoon and declare I'm making the big pasta dish for the weekend. I'd like to make a Timpano. But that's too much work. However, I'd try a lasagna with some traditional Italian ragù (that's the sauce).

For now, I'll keep enjoying the food my mom prepares. I know there's lots of people who would like to have some food made by their mothers.
