This is a favorite easy one skillet dish. It is made from red cabbage, turkey sausage, and potatoes.
First I dice up the potatoes, add some garlic, and cook them in some olive oil about 15 minutes.
Next I cut the turkey sausage into chucks, add to the potatoes, and cook about another 10 minutes until the sausage and potatoes are browned.
Next I chop up the cabbage and lay it on top of the sausage potato mixture. I sprinkle the cabbage liberally with seasoning and coconut aminos ( this is a healthier substitute for soy sauce).
I put a lid on the skillet now and let the cabbage steam on the top. I like mine left a little crisp, rather than limp, so steam to your desired firmness.
And that's it! Mix it together and serve on a plate. One skillet to wash and one plate to serve. Easy - economical - healthy. And also delicious!
It was a good Monday. Silver Sneakers and treadmill for my 10k. I had a productive writing day as well. I made a post for @ketcom's new community project : @upvotebuilders. And I almost finished my C.J. McCallister story - over 8000 words and only the final fight scene to go. Whew!
