As Halloween approaches, it's the perfect time to get creative in the kitchen and whip up some spooky, yet delectable treats that will impress all your guests. This year, I've made some cute small size snacks ā Vegan Stuffed Bell Pepper Mummies! These little guys are the perfect addition to your Halloween party spread, and they're sure to steal the spotlight.
These mummies are an absolute feast for the eyes, and not just because of their eerie appearance. These small bell peppers are carefully cored, then filled with a scrumptious mixture of crumbled tofu, flavorful spices, and some melt-in-your-mouth vegan cheese. The result is a savory, protein-packed delight that will leave your taste buds howling for more. To take them to the next level, wrap them in strips of dough to create the mummy effect. Just picture these little guys baking in the oven, transforming into adorable and spooky treats with their "bandaged" exteriors.

If you don't celebrate Halloween, don't worry - this can simply be a fun activity for yourself or your family/friends. I would surely make this cute meal during any other time of the year.
A quick note: I made a very simple dough for this recipe, therefore it's not the best for wrapping the peppers, it is very fragile. So quite some effort is needed to wrap it up without breaking it. For best results - use bought or homemade vegan puff-pastry!

You will need:
For the dough:
ā 120 g. wheat flour
ā 1 teaspoon of baking powder
ā ½ teaspoon of salt
ā 60 ml. of water
ā 1 tablespoon olive (or other) oil
For the peppers:
ā 5-6 small sweet peppers
ā 180 g. Tofu "Marinated" type (other types are also suitable)
ā 50-60 g. of vegan cheese of your choice (if using)
ā Pinch of salt and pepper
ā ½ teaspoon of dried oregano
ā ½ teaspoon of ground sweet pepper
Preparation
- Preheat the oven to 200 degrees Celsius.
- Combine the ingredients for the dough and knead until smooth.
Form into a ball, roll it out to be about 0.3 cm. thick.
Cut it into about 0,5 cm. or less wide stripes. The length of the stripes was about 30-40 cm.
- Cut the peppers in half lengthwise and remove the seeds.
- Crumble the tofu with a fork or with your hands and mix it with salt, pepper, oregano and sweet paprika.
- Grate the cheese of your choice (if using). Mix the tofu mixture with the cheese. You can skip the cheese here as well and simply not use it.
- Stuff each pepper completely with this mixture.
- Roll each pepper with strips of dough (the dough is quite fragile, so roll very carefully. It would be best to use puff-pastry (homemade or store-bought)). For some peppers I used 2 stripes of dough to wrap.
- After twisting the strips, brush them with a little olive or other oil. If you are using edible eyes (you can find store-bought ones or substitute them with a piece of olive, peas, beans, etc.), put them in now. If you are using inedible ones, put them on as soon as the peppers are cooked (I used fake ones for the sake of photography).
- Bake in the oven for about 15 minutes or until lightly browned.
