For a hearty low-carb pasta, try this zucchini noodles. This recipe is so easy to make yet very tasty!
I used two medium zucchini but it's only good for one serving (if you're not that hungry! lol) So if you're going planning to have a big batch of zucchini pasta just adjust the recipe.
I use a knife to cut the zucchinis the long way because I was lazy to clean to the spiralizer but if you have a spiralizer or big grater, it's better to use it if you're making a big batch of pasta.
Ingredients:
2 Zucchini
1 tablespoon Olive oil
2 Garlic
Red pepper flakes
Salt & pepper
Instructions:
- Heat up olive oil in the pan and saute garlic until translucent. Add the zucchini and cook until tender (about a minute under low heat).
Serve with spaghetti sauce or you can also try it with just olive oil and garlic like an Aglio e olio pasta if you want a simple dish.
