I have today some tropics vegetables from the supermarket, This consist of string beans, squash, snake gourd, eggplant, tomato, onion, ginger and mushrooms.
I planned to make a tropics vegetable soup from our region, it’s very easy to make and super quick to cook. It has earthy flavor and it taste delicious whilst hot. And thanks for this soup, it helps me a lot in my lactation.
This is easy as 1- 2- 3
- Chopped all vegetable in bite sized
Boil a water (3 cups) in a pot , Add together the onion, ginger and tomato. Once boiled, simmer and add the Pandan leaf. - Add the remaining vegetable, starting from squash and add the rest. Cooked until all vegetable are tender.
- Season with salt and pepper.
- Serve hot and enjoy.
We basically boiled all the vegetable. The tomato, onion and ginger serves as the flavoring base, The infusion of different flavor of the tropical vegetable makes this dish light and earthy flavor.

I believe this not a vegetable, rather it's a kind of herb. We called this Pandan leaves - we usually used it for making sweets or we added it when boiling rice. It smells incredibly fragrant especially when added to rice.
Isn’t that easy….
Not to mention it is packed with fibers and antioxidants.
