Fruits and Veggies Monday - Fruit salad and Fried rice

Hello #fruitsandveggies family, Hope you are all good.

I was trying to finish as much as i can in my fridge before i go for food shop tomorrow, So, here what i come up with, A Fruit salad with coconut and a quick veggie fried rice. I enjoyed this for my lunch and a happy tummy i am.

I may called this Tropical fruit salad, The guava, apple and young coconut meat goes well together. They serve as my starter and is deliciously refreshing!

And whilst my children sleep, i quickly rush out to the kitchen to make a quick meal for me, I spotted carrots, green peas and red capsicum, voila, i got rice too, So i can make a fried rice for lunch.

For this Fried rice, I sauteed garlic and onion first, once the onion was soft, i add in the diced carrots followed by the capsicum. Once all tender, i added the rice and green peas and season with salt and pepper.

Quick and easy for a busy Mummy :)
