You don't need much to bake... cake.
There was a time people started you needed to weight very precisely each ingredient if you wanted to succeed in baking.
After years of experience, I can tell you this is nonsense. And if you use your common sense you know I am right. Do you truly believe those who started baking had all the luxury equipment we have these days? Did they stir each egg for 5 minutes, always stirring in the same direction?
All you need next to the ingredients are:
- a bowl/pan/pot
- scales/measuring cup/beker/cup
- mixer/ladle/spoon
What I use is:
- a bowl
- measuring cup or cup
- a ladle
No baking mold? You can bake cake/pie in a pan that is suitable for an oven too.
The amount of ingredients depends on the size of your mold/pan. Just like it is the case with bread the baking mold you use influences taste and looks.
Cake is good food.
My granny always baked one on Saturdays and this meant a slice with your coffee or tea. She measured each ingredient precisely and use goose eggs.
The ingredients my granny used:
- 175 grams of butter (room temperature)
- 175 grams of sugar
- 3 eggs / 1 goose egg
- 175 grams of flour
- baking powder
- vanilla sugar
- grated lemon zest (1 lemon)
- 3 tablespoons milk (if the dough is too thick)
She started with mixing the butter soft, next added the sugar and vanilla sugar.
After she added an egg and kept stirring till it all had a light color, the next egg was added, etc.
Flour and baking powder we're added by little bits after it went through a sieve.
The grated lemon zest was added at the end.
She used the paper the butter was wrapped in as a layer for the baking mold.
My cake recipe is different.
I do not use butter, eggs or milk. It's not that I can not eat it, I am vegan, but because these ingredients are expensive.
My ingredients
- 125 grams sunflower oil
- 200 grams of sugar
- 50 grams of oatmeal flakes
- 150 grams flour
- baking powder
- 200 grams water (2 cups)
If you have a close look at the ingredients you see the 3 basics (butter, sugar, flour) have the same amount.
And this is what counts. You can use a cup or beker instead of scales too.
Do not use the same amount oil it will make your cake taste like oil.
I simply put all ingredients in a bowl, stir and it's ready.
Make your cake special with an extra ingredient.
I use oatmeal flakes for an ingredient and add raisins. Both I soak in warm water first.
There's no need to buy oatmeal flour once out of the oven you will not find those flakes back.
I use baking paper for my mold.
It's easier to lift the cake out of it.
No baking paper? Use butter or oil to spread on your tin and some flour so it won't stick.
This is the result. The cake tasted extremely good and reminded us partly to our Dutch raisin bread.
Peaches give an extra sweet and soft taste to your cake.
You can add apple with cinnamon too.
Lay it on top or push it a bit into the de dough.

Like said it depends on the baking mold you use what your cake will look like.
My granny added grated lemon zest, I added almond to this one, but you can also add banana, rum, cocoa or something else you like to make it taste better or special (once we baked a green and red cake for the scouting to sell).
Instead of oatmeal flakes, you can use only flour if this is expensive or you do not have it available.
Taste your dough. If you like it less sweet you can use less sugar.
You can add some powder sugar on top if you like.
- Oven temperature: 180 °C (325 ° F) - middle of the oven
- Time: 40 minutes Do not open the oven in the first 15-20 minutes.
