Romanian Vegetable Beef Soup

Hi there!!

How did you spend your weekend? And what about you, everything fine? I'm pretty ok, I have one of those moments when I don't feel like doing anything, just want to hang out and go somewhere new! Maybe I'm just bored, Idk...but right now I'm going to write for you this recipe and then I'll took a walk! cause walking always helps! It has so many benefits, besides the healthy ones for the body! Did you know that walking improves your mood, hapiness, self-esteem and gives you more energy? 

But let's talk about this recipe I have for you! As you read in the title, it is about a Beef Soup full of vegetables. One delicious soup! I love soups!! Soups are my comfort food, mostly in the winter! But I enjoy a good soup everytime, no matter the season. Beef soup is popular in Romania, you can find it pretty much in every restaurant. By following this recipe, you can get an authentic taste of this soup. 

HERE ARE THE INGREDIENTS FOR THIS BEEF SOUP:

  • 2 lbs beef 
  • 200-300 grams cauliflower (in small bouquets)
  • 200-300 grams green beans pods
  • 1 pepper 
  • 2-3 potatos
  • 3-4 medium carrots 
  • one piece of celery root
  • 1-2 parsley root
  • 1-2 parsnip
  • 2 medium onions
  • tomatoes juice 500-600 ml
  • fresh lovage, parsley, dill
  • Water 3-4 liters.
  • Salt, pepper, bay leaf
  • Optional: lemon, vinegar or borscht, sour cream

INSTRICTIONS:

1. Bring the water to a boil. Add salt, black pepper, bay leaf. When the water starts to boil, add the meat. Reduce the heat to minimun and let to boil for an hour, hour and a half, depends on the meat. You want your meat to be pretty much 80-85% done before adding the other ingredients.

2. Meanwhile, cut the ingredients in small pieces. 

3. Add the ingredients to the soup. Boil everything until all veggies are completely done. 

4. Add salt, pepper and the fresh parsley, dill, lovage.

5. Optional, you can add lemon juice, vinegar, borscht or sour cream.
