This dish I made as the starter for a 4 course Carrot inspired dinner
Main : Carrot "Meatballs" with Couscous and a roasted carrot cream
I started out with a small mountain of carrots and other neat ingredients...
Steps
1.add peeled and cut carrots to a baking tray
- add garlic, red onion a few cocktail tomatoes and seasoning, drizzle with olive oil and mix and put it in the warm oven ( 180 degrees) for about 45 minutes or til carrots are tenderly roasted
this is my base for all elements in this dish along with the next steps - fry slowly chanterelles and Portobello mushrooms in a mix of butter and olive oil on a pan
they will provide the meaty flavor to the "meatballs"
- soak couscous in boiled water...(or whichever way you usually prepare couscous... I add olive oil before the water this will prevent to much stickiness
- take a part of the roasted carrots and the chanterelles and portobellos and blend them coarsely not too fine
- mix that with a bit of the couscous and an egg... not too wet a mixture if too wet add a bit of flour ...or ground nuts ...
- now you have your "meat mix" for your meatballs
- shape them with a teaspoon and fry in a mix of butter and olive oil...
carefully turn them and brown on all sides
- blend part of the roasted carrots with cream cheese and a bit of double cream
till you get a rich creamy paste... this is your dipping
- the last part of the roasted carrots and the chanterelles and portobellos you mix with the remaining cous cous, I also add a mix of extra virgin olive oil with basil and garlic to the mix...
- Plate up and serve...
the base is the same but the 3 elements on the plate are very different in both taste and texture ... and if you are vegan simply leave out the non vegan elements or replace them with vegan alternatives ...
