So ... what to do with you left over Potato/Jerusalem artichoke soup ? since I also had a bit of salmon roe leftover I got the thought that blinis with smoked salmon, salmon roe and a sourcream dressing would be absolutely lovely ...
Blinis
2dl of the leftover soup
2 eggs
15o grams of flour
1/2 teaspoon of baking powder
whisk it well together
I fried my blinis in butter
Sourcream dressing
Sourcream
Mayonaise
red onions finely diced
chives finely cut
a bit of fresh lemon juice
salt and pepper to taste
Plate up and enjoy little heavenly bites
