Chef Jeff's Roasted Tomato Marinara

This homemade roasted tomato sauce is easy to make and provides the perfect base for countless Italian dishes. Below I will provide step by step instructions to simply make your own tomato marinara.

Ingredients

5 lbs of Fresh Tomatoes
1 Onion
1 Clove of Garlic
Handful of Fresh Basil
Olive Oil
Salt/Pepper

Step 1: Gather & Wash Tomatoes

I used a mixture of Roma tomatoes and vine-ripes from Michigan. Wash the tomatoes and core the pits.

Step 2: Oil 'em Up!

In a large bowl douse the tomatoes with olive oil and sprinkle with garlic powder. Be sure to mix them up to get all sides of the tomatoes.

Step 3: Place on Roasting Pan

Place the tomatoes on a roasting pan. Sprinkle with salt and pepper. Chop the garlic and basil and spread evenly across the tomatoes.

Step 4: Pop 'em in the Oven

Put the oven on 300 degrees and roast for 3-4 hours. Be sure to check up on them and make sure nothing is burning.

Step 5: Cool 'em Off

Take them out of the oven and let the roasted tomatoes cool for a bit.

Blend 'em

Place the tomatoes, basil and garlic into a blender along with some chopped onion. Blend until smooth.

Jar it

Pour the tomato sauce into jars.
