
Apple-Carrot Summer Slaw
Soak up those last days of summer and make this refreshing cole-slaw for the end of summer BBQ. The sweet and tart apples provide a great alternative to cabbage. It's a simple yet impressive recipe and I will show you how to make it with just a few healthy ingredients and 7 easy steps.
Ingredients
10 oz Carrots -Julienne style
3 Granny Smith Apples
1 cup Dried Cranberries
1/4 cup Mayonnaise
3 tbsp Plain Greek Yogurt
1/2 tsp Salt
1/2 tsp Celery Seed
3 tbsp Apple Cider Vinegar
3 tbsp Honey
Step 1 - Begin with the Carrots
Place the 10 oz of carrots cut julienne style into a large bowl. I used pre-cut carrots but feel free to use fresh and cut your own.
Step 2 - Julienne the Apples
Cut the apples into small match-stick sized pieces. This will be the most time consuming part of the entire process. Be sure to watch out for those fingers!
Step 3 - Add the Apples
Add the sliced Apples to the bowl full of Carrots.
Step 4 - Pour in the Cranberries
Add 1 cup of Cranberries to the bowl of Apples and Carrots.
Step 5 - Mix up the Dressing
In a small side bowl, whisk together the mayonnaise, vinegar, yogurt, honey, salt and celery seed.
Step 6 - Pour & Toss
Once the dressing is mixed together, pour it over the bowl full of carrots, apples and cranberries. Toss well and chill.
Step 7 - Enjoy!
Once it's cold it's ready to eat. This cole-slaw makes a great side for BBQ meals or burgers. I even like to put it on top of sandwiches. The possibilities are endless.
