Zucchini Walnut Bread

This week's special ingredient in the @steemit-ironchef challenge is courgette also known as zucchini or summer squash. Zucchini is an awesome summer vegetable that is fairly easy to harvest and can be incorporated into a variety of dishes. Here I will show you how to make a simple and delicious Zucchini bread made with walnuts and cinnamon.

Ingredients

2 cups of shredded Zucchini
1 cup of chopped Walnuts
3 cups of Flour
2 1/4 cups of Sugar
3 Eggs
1 cup of Vegetable Oil
3 teaspoons of Vanilla Extract
1 teaspoon of Salt
1 teaspoon of Baking Soda
1 teaspoon of Baking Powder
1 heaping tablespoon of Cinnamon

Step 1: Shred the Zucchini

For me it took about 2 decent sized zucchinis to fill 2 full cups. I used a blender but if you don't have one handy you can use a grater.

Step 2: Chop the Walnuts

I put the walnuts through the blender as well. You can buy walnuts pre-chopped or you can use a knife to finely mince them up.

Step 3: Mix the Dry Ingredients

In a large bowl, mix the flour, salt, baking soda, baking powder and cinnamon together

Step 4: Cream the Wets

In a large bowl, beat the eggs, oil, vanilla extract and sugar until creamy.

Step 5: Add the Dry Mix to the Cream Mix

Pour the flour mixture into the creamed sugar mixture and beat until completely mixed.

Step 6: Add the Zucchini and Walnuts

Pour the Zucchini and Walnuts into the mixture and stir until incorporated.

Step 7: Pour Batter into Pans

Pour the mixture into 2 - 4"x8" greased and floured bread pans. Preheat the Oven to 325 degrees Fahrenheit.

Step 8: Bake it!

Bake it in the oven for roughly 50 minutes. It may take a little longer. Use a toothpick to probe the bread to see if it is ready.

Step 9: Enjoy!

Once the bread is complete, let it cool a bit and serve warm with butter. It is a delicious autumn treat that's easy to make and will surely leave you satisfied.
