Arrabbiata Eggplant Parmesan Sandwich
Here we are in Week 6 of the 2017 @steemit-ironchef challenges. The special ingredient for this week is the Eggplant 🍆 . I chose to go with a twist on a classic Eggplant dish, the Eggplant Parmesan. With this version I turned it into a sandwich and used an Arrabbiata style sauce for a flavorful addition. Below you can discover how to make this delicious sandwich in a few simple steps.
Ingredients
Eggplant
Roll/Bread of Choice
Fresh Mozzarella Cheese
Shredded Parmesan
Arrabbiata Sauce
Bread Crumbs
Egg
Olive Oil
Step 1: Peel and Cut the Eggplant
I peel the eggplant and simply slice it into circles. Feel free to cut them on whatever angle you like, but be sure the pieces are roughly half inch thick.
Step 2: Prepare Eggwash and Breadcrumbs
Whisk up an egg or two and put a bowl of bread crumbs beside it.
Step 3: Dip and Fry
Dip each piece of eggplant into the whisked egg and then cover it with breadcrumbs. Fry it in olive oil on the stove until crispy and golden brown. Flip to ensure both sides get cooked.
Step 4: Place into Dish & Coat with Mozzarella
Place the freshly fried pieces of Eggplant into an oven-safe dish and cover with fresh mozzarella chunks.
Step 5: Cover with Arrabbiata Sauce
I used Arrabbiata Sauce but you can utilize any tomato sauce you'd like. Arrabbiata is a spicy and flavorful Italian red sauce made with roasted hot peppers, garlic and tomatoes.
Step 6: Bake It Up
Pop the eggplant into the oven and bake it on 450 degrees. Add Parmesan cheese to the top and let it melt. Keep it in the oven for roughly 10 minutes until it begins to bubble up.
Step 7: Toast The Roll
Take the eggplant dish out of the oven and toast up your roll/bread of choice.
Step 8: Throw It On A Roll & Enjoy!
Put a nice chunk of that delicious cheesy eggplant goodness onto a roll and get ready to enjoy! Be sure to have some extra napkins on hand... it might get a little messy!
