El pan es uno de los alimentos preparados más antiguos que ha viajado por diversas culturas y se ha mantenido en el tiempo como el preferido de la sociedad; siendo su materia prima la harina de trigo, las técnicas de elaboración, ingredientes, cocción y combinación de sabores son numerosas y le hacen más interesantes de lo que a simple vista puede parecer.

Bread is one of the oldest prepared foods that has traveled through various cultures and has remained over time as the favorite of society; being its raw material wheat flour, the techniques of preparation, ingredients, cooking and combination of flavors are numerous and make it more interesting than it may seem at first glance.

A pesar de que la producción del cereal trigo es ínfima, el consumo de pan es significativo, dado que en muchas provincias, ciudades y pueblos gozan de reconocimiento nacional por mantener una tradición panificadora que le otorga mérito dentro de la variada gama de productos, siendo el pan de jamón uno de ellos. Siendo las cosas así, en este didáctico post comparto cómo se hace un exquisito pan de jamón desde la comodidad de nuestra cocina.

In spite of the fact that the production of the wheat cereal is tiny, the consumption of bread is significant, since in many provinces, cities and towns it enjoys national recognition for maintaining a baking tradition that gives it merit within the varied range of products, ham bread being one of them. This being so, in this didactic post I share how to make exquisite ham bread from the comfort of our kitchen.

1 kg de harina de trigo,
300 g de jamón cocido,
250 g de jamón ahumado,
220 g de tocineta,
150 g de manteca de cerdo,
150 g de azúcar refinada,
150 g de queso crema,
100 g de mantequilla sin sal,
80 gramos de aceitunas rellenas,
30 g de pasas dulces,
15 g de sal,
5 g de levadura fresca,
1 huevos,
½ taza de agua.

La preparación del pan de jamón es un arte particular con cierto legado familiar, desde su origen a mediados del siglo XIX en una panadería de la metrópolis capitalina de Venezuela, Caracas; el procedimiento ha variado de acuerdo al antojo de cada panadero y en el caso del pan artesanal o casero, mucho más. Por tanto, es posible que esta receta sea diferente a la tuya o la que emplea tu panadería de confianza.

The preparation of ham bread is a particular art with a certain family legacy, since its origin in the mid-nineteenth century in a bakery in the capital metropolis of Venezuela, Caracas; the procedure has varied according to the whim of each baker and in the case of artisan or homemade bread, much more. Therefore, it is possible that this recipe is different from yours or that used by your trusted bakery.

Vierta ¼ de taza en una olla y póngala a fuego lento hasta que esté tibia o alcance una temperatura promedio de 45 °C.

Pour ¼ cup into a saucepan and place over low heat until lukewarm or reaches an average temperature of 45 °C.

Devuelva el agua tibia a la taza, añada una cucharada de azúcar refinada y remueva hasta disolver, luego añada la levadura y continúe removiendo hasta obtener una mezcla homogénea.

Return the warm water to the bowl, add a tablespoon of refined sugar and stir until dissolved, then add the yeast and continue stirring until a homogeneous mixture is obtained.

Tape la taza y espere unos 12 minutos para que la levadura comience a fermentar y levante para poder utilizarla.

En una sartén caliente añada la mantequilla y manteca para disolver y mezclar.

En un bol o recipiente suficientemente espacioso vacíe la harina de trigo y añada los ingredientes, comenzando por el huevo.

Se parte la cáscara y se añade a la harina el huevo con yema y clara conjuntamente.

Break the shell and add the egg yolk and egg white together to the flour.

Vierta la mezcla de manteca y mantequilla, añada la sal y azúcar mientras comienza a remover en forma circular suavemente.

Ahora vierta la levadura y continúe mezclando hasta que el líquido penetre bien en la masa, cuando note una consistencia pegajosa debe terminar de agregar la harina y comience a amasar con las manos, puesto que ya no podrá hacerlo con una cuchara o paleta porque la masa estará muy dura. Con la levadura la masa tendrá la textura suave y esponjosa deseada.

Now pour the yeast and continue mixing until the liquid penetrates well into the dough, when you notice a sticky consistency you should finish adding the flour and start kneading with your hands, since you will not be able to do it with a spoon or paddle because the dough will be very hard. With the yeast the dough will have the desired soft and spongy texture.

Polvoree con harina de trigo la superficie plana y lisa en la cual sobará la masa para darle el punto de textura deseado.

Dust with wheat flour the flat and smooth surface on which the dough will be kneaded to give it the desired texture.

Tras sobar la masa por 20 minutos y tenerla lista, debe polvorear el bol e introducirla en forma de bola para tapar y dejar en reposo por 45 minutos.

After kneading the dough for 20 minutes and having it ready, you must dust the bowl and introduce it in the form of a ball to cover and let it rest for 45 minutes.

Al colocar la masa en reposo y mantenerla tapada fuera de corriente de aire, el fermento de la levadura comenzará a procesarse dando la suavidad esponjosa y aumento que la masa requiere.

By placing the dough to rest and keeping it covered out of the draft, the yeast leaven will begin to process giving the fluffy softness and rise that the dough requires.

Cumplido el tiempo antes mencionado, polvoree la superficie donde va a estirar la masa y rellenar los panes, coloque la masa y córtela en tres trozos de similar tamaño.

After the aforementioned time, dust the surface where you are going to roll out the dough and fill the loaves, place the dough and cut it into three pieces of similar size.

Vuelva dos trozos al bol y deje uno sobre la superficie para que comience a estirar la masa con un rodillo, presione y deslice cuantas veces sea necesario para lograr un estiramiento uniforme con una capa de masa con unos 2 mm de grosor.

Return two pieces to the bowl and leave one on the surface to begin rolling out the dough with a rolling pin, pressing and sliding as many times as necessary to achieve an even stretch with a layer of dough about 2 mm thick.

Vaya recortando y uniendo los bordes hasta dar forma cuadrangular a la masa.

Comience a cubrir toda la superficie con el jamón cocido y ahumado, tocineta, queso crema, aceitunas y pasas.
