I have often shared how good shredded chicken is. The secret is to season it well using ingredients that enhance the flavor of the chicken breast. I made a large batch that I will use to fill some empanadas.

Let's see how to make it. The chicken breast is cooked in boiling water for thirty minutes. The water contains black peppercorns, a bay leaf, coarse salt, and rosemary. Let it cool, then shred it. Cover and set aside while you start cooking the seasonings.

The basic ingredients for this dish are garlic, onion, and red pepper. Fresh herbs also play an important role in terms of flavor and aroma. Here, I use chives and cilantro. Potatoes give the sauce an interesting texture, as well as smoothness and creaminess. Separately, place the following ingredients in the pan where you will cook the chicken: three chopped garlic cloves, one diced onion, diced red pepper, two potatoes cut into small cubes, onion oil, curry powder, paprika, cumin, and salt. Start cooking over medium heat for ten minutes. During this process, you can add a little chicken broth, which is the same broth used to cook the chicken.

Add the shredded chicken and mix everything well. The meal will be ready quickly. Just choose how thick you want the sauce to be. Also, add finely chopped zucchini when you turn off the stove.

Chives and cilantro: these two herbs are finely chopped and added to the final dish. They are the perfect combination mixed with chicken, bell pepper, and curry. This chicken will go in the refrigerator to be used later. It will be the filling for tonight's dinner: delicious chicken empanadas, one of my son's favorite foods.

Delicioso pollo con pimiento, hierbas y cebolla

En varias oportunidades he compartido lo bien que queda el pollo desmenuzado, su secreto está en darle una buena sazón utilizando ingredientes que potencian el sabor de la pechuga de pollo, yo hice una buena cantidad que me servirá para rellenar unas empanadas.

Veamos cómo hacerlo de forma sencilla, la pechuga de pollo es cocida en agua hirviendo durante treinta minutos, el agua contiene: granos de pimienta negra, una hoja de laurel, sal gruesa y romero. Se deja enfriar y luego se puede desmenuzar, éste pollo se reserva tapado mientras se comienza a cocinar los aliños.

Los ingredientes base para esta comida son el ajo, cebolla y pimiento rojo; las hierbas frescas también cumplen una función importante en cuanto a sabor y aroma, aquí utilice cebollino y cilantro, las papas nos ofrecen una textura bastante interesante en la salsa, tambien suavidad y cremosidad.

Aparte colocamos en el sartén en donde vamos a cocinar el pollo lo siguiente: tres ajos picados, una cebolla cortada en cuadritos, pimiento rojo cortado en cuadritos, dos papas cortadas en cubos pequeños, aceite onotado, curry en polvo, páprika, comino y sal; comenzamos a cocinar a fuego medio por diez minutos, durante este proceso podemos añadir un poquito de caldo de pollo, este caldo es el mismo en donde se cocinó el pollo.

Añadimos el pollo desmenuzado y mezclamos todo muy bien, la comida estará lista rápidamente, solo escoges como quieres el espesor de la salsa, también le agregue calabacín finamente picado al apagar la estufa.

Cebollino y cilantro: estas dos hierbas son finamente picadas y añadidas al plato final, es la combinación perfecta mezclada con pollo, pimiento y curry. Éste pollo irá a la nevera para ser utilizado más tarde, será el relleno de la cena de hoy, unas deliciosas empanadas rellenas de pollo, una de las comidas preferidas de mi hijo.
