**INGREDIENTES:** • 3 ó 4 Berenjenas (según el tamaño) • 1 limón • 1 taza de aceite de oliva o vegetal • De 6 a 8 dientes de ajo • 100 gramos de semillas de ajonjolí • Sal al gusto.

**PREPARACIÓN:** Lavamos bien las berenjenas, las secamos y llevamos directamente a las hornillas de la cocina (aquí no usamos ningún utensilio), le vamos dando vueltas hasta que estén bien quemadas por todos lados, las colocamos en un plato y esperamos que se enfríen para retirarle la piel.

**PREPARATION** Wash the eggplants well, dry them and take them directly to the stove (here we do not use any utensil), turn them until they are well burned on all sides, place them on a plate and wait for them to cool down to remove the skin.

Aparte tostamos las semillas de ajonjolí en un sartén o en el horno, (no pude tomarle la foto) la licuamos con un poquito de aceite de oliva o aceite vegetal y sal al gusto, si es sal marina mejor (eso sería el Tahini). El Tahini es una crema que usan mucho los árabes para sus comidas, pero es algo costosa, ellos la compran porque realmente la usan bastante, pero si uno no hace muchas comidas árabes y la queremos usar para pequeñas recetas como para esta crema de berenjenas, compramos mejor las semillas de ajonjolí y nos sale mucho más económico y súper fácil de preparar.

Retiramos esa crema de la licuadora (reservamos) y sin lavarla agregamos la pulpa de las berenjenas, se licua agregándole sal al gusto, el ajo y el jugo del limón, vamos vertiendo el aceite poco a poco hasta obtener una mezcla homogénea, por último agregamos una cucharada de la crema de ajonjolí (Tahini) y listo.

Remove the cream from the blender (reserve) and without washing it, add the eggplant pulp, blend it adding salt to taste, garlic and lemon juice, pour the oil little by little until a homogeneous mixture is obtained, finally add a tablespoon of sesame cream (Tahini) and that's it.

Lo vertimos en un envase de vidrio y lo llevamos a la nevera, se puede consumir de inmediato, pero particularmente a mí me gusta frio. Esta deliciosa crema y super saludable, se puede usar como sustituto de la mayonesa ya que la podemos untar en galletas saladas, casabe, pan tostado, también con palitos de zanahorias o ajo porro… ¡¡¡Buen Provecho!!!

We pour it in a glass container and take it to the refrigerator, it can be consumed immediately, but I particularly like it cold.
