INGREDIENTS

  • 1 medium red onion, cut crosswise into ¹/₂-inch slices
  • 1 red bell pepper, halved
  • 1 small zucchini, cut lengthwise into ¹/₂-inch slices
  • 1 yellow summer squash, cut lengthwise into ¹/₂-inch slices
  • 2 tablespoon olive oil
  • ¹/₂ teaspoons salt
  • 1 pre-baked 12-inch thin
  • 3 tablespoona jarred roasted minced garlic
  • 2 cups shredded part-skim mozzarella cheese, divided
  • ¹/₃ cup torn fresh basil

  1. Brush vegetables with oil; sprinkle with salt. Grill, covered, over medium heat until tender, 3-5 minutes per side.

  2. Separate onion into rings; cut pepper into strips. Spread crust with garlic; top with 1 cup cheese. Top with grilled vegetables, then top with the remaining mozzarella cheese.

  3. Grill pizza, covered, until bottom is golden brown and cheese is melted, 5-7 minutes. Sprinkle with basil.
