Today we will talk about cheese pancakes. Despite the seeming simplicity and a minimum of ingredients, to make a perfect cheese pancake is not easy.

Ingredients:
- Cottage cheese, 180 gr.
- Egg, 1 PC.
- Flour, 40-50 gr.
- Sugar, 1 tsp
- Vanilla sugar, 1 tsp
- Salt, pinch
Here is the approximate amount of flour, because its exact volume depends on many factors — the humidity of cottage cheese, egg size, the quality of the flour, its humidity, etc. So we will vary in the process.
Squeeze cottage cheese, mix with egg and knead thoroughly.
Add both sugar and salt, mix and get a fairly liquid substance.
Now gradually add the flour and knead the dough until it just starts to come off from the fingers. After that, leave the dough alone for 15-20 minutes.
We sculpt small balls, from which we form cheese pancakes and breaded in flour.
Fry in butter for 3-4 minutes on each side over medium heat until crust.
Serve with jam, sour cream, powdered sugar, etc.
