Let's talk about sandwiches!
Why sandwiches? Because it's Silver Bloggers #BOM for the month of April.
I can only think of three memories that I enjoyed making sandwiches. One is making it with my mom, the second was when we travel and the last was when I live in Australia for almost a year.
The sandwiches that I made with my mom were not for our consumption, not for our hungry eyes but it was for selling. I remember we made ham and cheese, egg sandwiches, chicken sandwiches, and tuna sandwiches all for selling. But it was a once-a-year sandwich selling.
There was this national examination for high school students that happens every year and the examination was held in the school where my mom teaches that's why she was able to get a spot where we can sell sandwiches.
On the night before the exam, we prepare all the sandwiches. I think I was about 8 eight years old then. She will assign me to make the Ham and Cheese sandwich since it was the easiest to prepare and then my mom will do the rest. It was with her that I learned how to make sandwiches but I don't have a memory of her preparing a sandwich for me during my school days since she was so busy at school back then. We are all going to pack the sandwiches in single-serving and have them ready for the next day's selling.
During travel time.
Whenever we have a long drive back then mom always prepares a sandwich for us. This time it's a chicken sandwich since it is my dad's and my favorite sandwich. My two older brothers are not that choosy when it comes to sandwiches, you can give them anything and they are fine. Me and Dad are always the ones who request something from Mom. And here is our favorite chicken sandwich recipe.

1/2 kilo boiled chicken breast
1/2 cup mayonnaise
1 bar cream cheese
1 stalk celery chopped
salt and pepper to taste
That's the recipe for our favorite Chicken spread. Our long drives anywhere are not complete without it. Now, I'm craving it as it's been a long time since I made that spread. maybe one of these days, I'll make one and shared it here with you.
When I was in Australia
Now, this is the time when I really explored making my own sandwiches. And I have a new favorite now. My new favorite sandwich is spinach, avocado with ham, and poached egg, honestly, it is only when I was there that I learned that I can spread avocado on my bread. And when I got back here in the Philippines I introduced it to my nieces and nephews and they love it. And it is also when I was there that I learned that I can live on sandwiches alone. hahaha.
Someone made this sandwich for me when he learned that I like spinach avocado with ham and poached egg. It doesn't look so good but I really appreciate the effort since he made this for breakfast.
And I think my love for sandwiches will stay forever.
