Hello, foodies and friends greetings Today I am presenting my recipe here for a contest By @foodiesbeehive hosted by @sirenahippie.
This recipe I made in purple, but it is a very popular food in south India. The uthappam is used as a full meal for lunch and is made in various ways. Mostly each restaurant has this food on the menu list. It is reasonably priced and known as the common man's food. I just twisted the recipe a little using blueberries and purple cabbage to make it purple And used commonly available ingredients to make it.

Ingredients:
1 cup Urad dal spilt white lentils
2 cup rice flour
4 leaves of purple cabbage
1 red onion
1/2 red paprika
1 dried green chili
1/2 tsp black pepper
1 tsp salt
1/4 tsp coriander seeds
1/4 tsp cumin seeds
2 tsp oil.
few parsley leaves
2 cm fresh ginger

Soaked the lentils for 2 hours.
Drained water and blended it in a mixer.
Made fine paste
and poured into a pan.

gradually added 2 cups of rice flour to the lentil paste and added 1 cup of water and made a nice and smooth batter. for a perfect consistency, the spoon should get coated with the batter.
Kept this batter aside for about 4-5 hours to naturally ferment.
( can overnight also.)

We don't like artificial colors in food. so I chose blueberries and purple cabbage to make purple food/my recipe.

Used 1 tbsp blueberries and crushed them and mixed into the batter.
here nice purple color batter is ready. (can make plain Dosa/pancakes with this batter but I wanted to add some vegetables to it.)

Chopped onion, Paprika, parsley, green chili, and ginger and mixed into the batter.

Crushed coriander and cumin seeds and added them to the batter together with salt and pepper.

Chopped cabbage and added to the batter.

Stirred all vegetables and made the nice purple batter for uthappam

warmed a frying pan brushed with oil, poured one ladle of batter into the pan, and spread it with the ladle in a circle shape.
On the batter sprinkled some oil and covered the pan for 2 minutes.

Here is how they look.
but I always make complete food plate
I wanted to make some filling using purple cabbage. and raita using blueberries.
raita
Ingredients:
1/2 cup homemade yogurt
1/2 tsp sugar
1 pinch of salt
2 pinches of black pepper
2 pinches of roasted coriander and cumin seeds powder.

In the yogurt mixed sugar, salt, pepper cumin-coriander powder and
crushed blueberries and the raita was ready.

To make stirred fry cabbage ingredients:
1 cup sliced cabbage
1 red sliced onion
2 tsp oil
juice from 1/4 lime
1/2 tsp salt
1 tsp mustard
1/4 tsp black pepper.

Heated oil in a pan and added sliced onion stirred for 2 minutes added sliced cabbage stirred and added salt pepper and mustard. stirred it for 2 minutes and squeezed lime juice into it.
